Chicken 'n Mango
Description:
Summer is the time to enjoy the outdoors---and what could be more enjoyable than having a delicious bite of spicy chicken 'n mango. The usual barbecue will step aside for this spicy and tasty chicken delight!
Ingredients:
4 boneless chicken breast fillets
2 tsp freshly ground black pepper
1 tsp ground cumin (very important ingredient)
1 tsp paprika
Some salt, and seasonings (aji, Mrs. Dash, etc.)
4 slices ham (or prosciutto)
2 pieces of semi-ripe mango peeled and cut into 3/4 " thick
1 tbsps sweet chili sauce
2 tbsps sweet syrup (or light honey) - or medium brown sugar
Sauce:
Place mango, garlic, chilli sauce, syrup in a small saucepan and cook over low heat for 4-5 minutes or until sauce thickens slightly. Keep on stirring so as not to burn.
Directions:
-Preheat barbecue to a high heat
-Put chicken piece between sheets of greaseproof paper and pound lightly with a mallet to flatten into about 1/2 inch thick
-Combine pepper, cumin, paprika and sprinkle all over the chicken.
-Layer ham (or proscuitto) and mango slices on chicken and
roll up by securing with wooden toothpicks (or cocktail sticks).
-Place chicken pices on lightly oiled barbecue pit and cook
for 3-5 mihutes each side or until chicken is tender and cooked.
Serve w/ the sauce.
**Canned mangoes (drained) can be used instead of fresh
mangoes, preferably two 14 oz. cans. Use 3/r of each can
for the sauce and the rest for the filling int he chicken.

ReplyDeleteMmmmm...no problem daming mangoes dito sa Cebu and my daughter Alex suggested bacon instead of ham..bacon eater kasi yan. Tita Litz keep them coming...hindi na ako mag iisip ng food to serve...and I will never hear those words "that's the food you cooked again, cook something else naman... and I would ask like what?" although I counter by saying "just be thankful to God there is food on our table"

ReplyDeleteWell if you use bacon, ok din...but it may taste like chicken cordon bleu, the idea of using ham is so that the chicken's taste will "float" cause bacon is a little salty and has a smoky taste. But go ahead and try---
Choose mango that is not too ripe and yet not too unripe (medyo malapit nang mahinog).
It's really fun to hear us pinoys talk---even here in the U.S. - it's the same situation...pag pinoy-masaya and balitaan.
Well, I hope you can surprise your family---I intend to post one recipe each wekk hanggang magsawa kayo (LOL)!
