Macadamia-Crusted Mahi-Mahi Fillet


Description:
One will never go wrong with Fish fillets like mahi-mahi, or tilapia for instance. Other than the usual grilled fish, this version adds a delicious touch of adding macadamia nuts (you can use cashew, or any kind of peanuts if macadamia is not available).

Ingredients:
For the sauce:
1 tbsp. butter
3 tbsps finely minced onion
1/2 cup diced fresh pineapple
1/4 cup frozen concentrated pineapple juice
1-1/2 tbsp rice vinegar (no substitutes, please)
1 tsp minced ginger
1-1/2 cups vegetable stock (from boiling veggies)
1/2 tsp soy sauce (if you have Tamari sauce---all the better)
pinch of cayenne pepper

For the mahi-mahi:
4 4-oz mahi-mahi fillets
Salt and pepper to season
1/4 cup all purpose flour (APF)
2 beaten egg whites (no yolks please)
1/4 cup crushed macadamia nuts


Directions:
Preheat the oven to 400 degrees F.
In a medium sauteing pan, melt butter over low heat
Add the onion and cook until translucent
Add pineapple and cook till ingredients turn brown (about 15-20 minutes)
Add the pineapple juice and rice vinegar and cook once again for 5- 10 minutes.
Wait till it turns thick and golden.

Add the ginger, and vegetable stock and let boil.
Add the soy sauce and cayenne pepper and simmer for 15-20 minutes.
Set aside.

Season fish with salt and pepper
Dredge each fillet with flour then dip in egg whites and roll in crushed macadamia nuts (or the nuts you are using
Place in a greased baking dish and bake for 10-15 minutes until fish is cooked thoroughly.

Serve each fillet with caramelized pineapple sauce.

  2. Tumataba na ako sa katitingin ng recipe hahaha! Tumatawa ako dito ng mag isa ko lang..1:04 am na kasi ngayon lang ako natapos mag check ng email ko..actually hindi pa pala natapos bukas ko na check ang iba...

  3. It's a fish that we also have there in the Philippines, pareho din ang tawag..altho a bit on the expensive side. and bihira. You can alternate this with any fillet: tilapyia, salmon, sole, etc. But mahi-mahi is extremely good!

  5. Mahi mahi really is the name. Mario's used to serve that---coming all the way from Hawaii at that time, but I am sure since it is quite in demand, I am sure it is available, perhaps in Farmers or even in other wet markets. Medyo mahal nga lang.

    Dati rati we go to bed by midnight. Kasi swing shift si Danny, he comes home from work at 11:30pm, and he wants to unwind muna at mag multiply, hinihintay ko siya lagi..siya ang madalas mag stay late dahil sa multiply. Kagabi inabot ako ng pasado ala una dahil hindi matapos tapos ang pag check ko ng email ko ;-)

  8. Well, honestly, I am also like you---I can stay up late, kahit walang tulugan, especially when I was younger. Even Anne and Jade, when they were younger, kayang kaya not to sleep---para kaming mga vampira. Awake the whole night---then bagsak the whole day! But I am glad, motherhood has changed Anne...and Jade is also working---so she can't stay up late like she used to!

    And for myself---ay di na puwede...cause you know how life is here---no maids to serve us!

  10. Thank you, now I know that mahi mahi is mahi mahi din dito sa atin. I will try to keep my eyes pealed for this fish in the wet market and the stores. I don't recall ever spotting it raw or cooked. Hhhmmm...I will try to look in the wet market in Iligan. It was in Iligan that I saw so much sea creatures being sold in their wet market a few years ago. I will take pictures.

I was able to taste turtle soup once...in my ages ago flying days...sa Lantaka Hotel, Zamboanga (lintik na hotel yun daming moomoo) henyways, imagine daming turtles nakalagay sa malaking palanggana sa tabi ng hotel restaurant...eh yun pala ang iseserve nila as soup. Eh napa subo na ako eh di go for it na lang. Okay naman siya parang sabaw ng balot ang taste. Now if you love balot and we know that the best part is the sabaw...na nakakabitin kasi kakapiranggot lang sa balot...go for the turtle soup daming balot like taste soup to be had! Pero wawa talagang isipin TURTLES...chocolate turtles lang ata ang anytime pwede kong kainin.

However, next to impossible yata---so let's just be content with the net! Unless you have the web, like what I do with Anne and the kids...once a week---!

  20. You can actually really create a cooking/ recipe-exhange group in Multiply. I belong to several groups here, and you can check them out. Migs belongs to an archaeology group, would you believe! Yung mga hang-ups niya about Egypt, mummies, etc... nakukuha niya from his group! Si Gina and I naman, we belong to a dog-lovers group! And also some crafts group too... Check it out from my site! :o)

    I joined to a lot of groups here also Anne. It's your mom that could start a recipe/exchange group that I would gladly join, but the problem is I have no recipes to exchange at this time. All the recipes I do have came from your mom hehehe...
